box lunch! OM OM OM


i made this last week. it's amazing how quickly i go through whole wheat tortillas because of these.
fancy version

-grill some tofu, add fave seasonings (used whole foods' 365 teriyaki sauce)
-take a whole wheat tortilla (cold) and put on your fave spread (i used garlic hummus)
-throw in some couscous or quinoa from the nite before (cold or hot)
-add some greens
-put in the tofu and wrap

VOILA! a delicious vegan lunch!

as my supplies dwindled throughout the week i would make wraps with everything but tofu, or put in some tofurky slices, just greens and hummus, add some olives, etc. can't really go wrong. it's so yummy!

the muffin cake


so i wanted to make muffins last week but didn't have a muffin pan. solution: muffin cake!

i found a recipe for a blueberry whole wheat cake that i modified a bit. i used dried cranberries, then made a little frosting to add moisture to the cake (it turned out a little dry).

all in all it was okay. i think it would have made better muffins though...
